Lemon Butter Linguine with Pork & Zucchini

Makes 4-5 servings

Ingredients

1 box of linguine pasta

Olive oil

2-3 cloves of garlic, minced.

454g ground pork

1 zucchini, sliced

4 tbs unsalted butter

1 cup heavy cream

Juice from 1 lemon

1 cup pasta water

2-3 cups parmesan cheese.

1 tb capers

Salt

Pepper

1-2 tbs chopped parsley

1. Cook the pasta until al dente. Reserve about 1 cup of pasta water.

2. In a large pan over high heat, cook the garlic and ground pork for about 5 minutes. Add the zucchini and cook until softened. Remove the pork and zucchini from the pan.

3. Melt the butter on the pan, and then add the cream and lemon juice. Simmer on low for about 1-2 minutes, and then add the pasta. Toss everything, and gradually add the pasta water. Add the cheese, pork and zucchini into the pan, and toss everything. Add the capers, a bit of salt and pepper, and top with more cheese and parsley. Enjoy!
