Roasted Cauliflower with Oregano and Pesto

Makes 3-4 servings

Ingredients

1 cauliflower

Olive oil

Salt

Pepper

1-2 tbs dried oregano

1 lemon, sliced

Greek yogurt

Paprika

Fresh oregano

Store-bought pesto

1. Preheat the oven to 400F. Line a baking tray with parchment paper. Set aside.

2. Cut your cauliflower into small pieces, and place them on the tray. Drizzle the cauliflower with about 1/4 cup of olive oil. Sprinkle with salt, pepper and dried oregano. Using your hands, toss the cauliflower until coated. Add the lemon slices on top. Roast in the oven for about 20-30 minutes.

3. Assemble the dish. Smear some Greek yogurt on a plate, and add the cauliflower. Sprinkle with a bit of salt and paprika. Add a bit of fresh oregano and dollops of pesto throughout the dish. Enjoy!
