Pantry Pasta with Swiss Chard

Serves 2

Ingredients

About 60g of spaghetti, cooked (or roughly enough for 2 people)

Olive oil

1/2 bunch of Swiss chard, chopped

1 package or 100g of pancetta

1 cup parmesan cheese

Salt and pepper

2 eggs

1/2 cup breadcrumbs

Parsley (to garnish)

1. In a large pan over medium-high heat, sauté the pancetta for about 5 minutes, or until almost fully cooked. Add in the Swiss chard and cook until wilted. You may add some olive oil if needed. Lower the heat. Add in the pasta and toss, and then add in the parmesan cheese. Set aside.

2. In a small pan, toast the breadcrumbs. Set aside. In the same pan, fry the eggs.

3. To assemble, add the pasta to a plate. Top with the egg and breadcrumbs, as well as salt and pepper. Garnish with parsley.
