Cashew-Sesame Noodles
Makes 3-4 servings
Ingredients
1 package of rice noodles
1-2 tbs vegetable oil
3/4 cup cashew butter
1 tb sesame oil
1 tb soy sauce
1 tsp rice wine vinegar
1 tb maple syrup
1/2 chicken broth
1/4 hot water
1 tsp chili garlic sauce
1 garlic clove, minced
About 1/2 tsp ginger, minced
1/2 package of ground pork (about 250g)
Chili flakes, cilantro, green onion and Chinese preserved vegetables for garnish
1. Cook the rice noodles according to the package. Rinse with cold water, and drizzle with a bit of vegetable oil. Set aside.
2. In a bowl, mix the cashew butter, sesame oil, soy sauce, rice wine vinegar, maple syrup, chicken broth, hot water, chili garlic sauce, garlic and ginger. Set aside.
3. Cook the ground pork over high heat with vegetable oil. Add the cashew butter sauce. Add the noodles and toss until coated.
4. Top with chili flakes and garnishes. Enjoy!
