Grilled Flatbread Pizzas

Makes 6 flatbread pizzas

Ingredients

6 Flatbread - store-bought or homemade

Cremini Mushroom and Goat Cheese Flatbread Pizza with rapini

1 cup goat cheese

15-18 cremini mushrooms, sliced

1 tbs Italian seasoning

Olive oil

Salt

Rapini

Chicken Tomato Grilled Flatbread Pizza

4 chicken thighs

2-4 tbs Italian seasoning

1-2 tbs lemon juice

1/4 cup olive oil

Mozzarella cheese, grated

15-18 cherry tomatoes, halved

1. Preheat the oven to 400F.

2. Marinate the chicken with italian seasoning, lemon juice and olive oil. place the chicken thighs on a baking tray and bake for about 20 minutes, or until fully cooked on the inside. Set aside.

3. Grill the flatbread using a grill pan with olive oil over high heat. grill on both sides for about 30 seconds, or until grill marks form. If you are using fresh flatbread dough, give each side about 1-2 minutes of grilling per side. Set aside.

4. On a pan over high heat, saute the mushrooms with olive oil, Italian seasoning and salt. Cook for about 2-3 minutes.

5. Assemble the pizzas. Bake for 15 minutes, or until the cheese is melted and all the ingredients are cooked. The goat cheese will not melt too much.
