Plant-Based Lentil Quinoa Tacos

Happy Cinco De Mayo AND Taco Tuesday! Make these tacos using pantry items!

Makes 4-6 servings

Ingredients

Oil (recommended - vegetable oil)

2 cups quinoa, cooked (about 1 cup dried)

2-3 cups red lentils, cooked (about 1 cup dried)

1/2 tsp cumin

1 tsp paprika

1 tsp garlic powder

Salt

Pepper

1/4 cup canned diced tomatoes

Tortillas

Sherry tomatoes, lettuce, cilantro and avocado to fill in and garnish

1. In a pan over medium heat, pour in about 3 tablespoons of oil. Pour in the cooked lentils and quinoa. Combine the lentils and quinoa using a spoon.

2. Season with cumin, paprika, garlic powder, salt and pepper. Mix until combined. Add in canned tomatoes. Let the ingredients cook for about 5 minutes, or until hot.

3. Assemble the tacos. Fill in and garnish the tacos with vegetables of your choice. Enjoy!

Tip: Warm up the tortillas by microwaving or lightly pan-frying them!
